Splash of lemon juice

Directions:

In a cocktail shaker add ice and gin, cranberry juice, and lemon juice. Shake well. Strain into an ice-filled collins glass. Stir in soda and add a festive garnish of cranberries. And don’t forget the rosemary sprig!

This Treat is No Trick!

I used to make these Pinwheels for my kids when they were in elementary school.  The recipe is pretty easy and quite versatile.  By that I mean, you can flavor and add color to both layers.  Example: add cinnamon or almond flavoring to the chocolate dough and add peppermint flavoring and pink food coloring to the white one.  Can you imagine eating a purple and green spiral cookie on somebody’s birthday?  Or how about a black and orange cookie on Halloween?

And just before you put them in the oven, you can also top them with sprinkles, candy shapes, or just plain sugar.  Use your imagination to make the most interesting of cookies for any holiday or celebration, because experimenting is part of the fun with this dough.

Grama Tina’s Spiral Cookies  D85 21 oct

¾ cup of softened butter

1 cup of white sugar

1 large egg

2 teaspoons of vanilla

2 ½ cups of all-purpose flour

½ teaspoon of baking powder

cocoa powder, peanut butter or Nutella – optional

rainbow sprinkles or candy shapes – optional

5 drops of food coloring – red, yellow, pink, orange, black – optional

1 teaspoon of cinnamon, almond, or nutmeg – optional

3 or 4 drops of flavoring – peppermint, lemon, etc. – optional

Preheat oven to 375° F.

Lay parchment paper on 2 large cookie sheets or grease well.

In large bowl, beat butter with sugar until fluffy.  Then beat in the egg and vanilla.

In a separate bowl, whisk flour with baking powder. Add to butter mixture in 2 additions, stirring until it becomes a soft dough.

Divide dough in half.  Add cocoa powder (and/or cinnamon, peanut butter, Nutella, or mint flavoring).  Mix and set aside.  Now move to the other ball of dough.  Leave this white and add mint or a cinnamon flavoring or any flavoring you like and coloring. Remember – both the colors and flavors should go together well.

Roll each ball out flat, and then place one on top of the other.  Take one end and slowly roll this up into a log.  Length-wise or width-wise determines how large your cookies will be.

Once you’ve completed rolling the dough, wrap it in plastic and place in the refrigerator until chilled.  This could take up to 2 hours, but you can leave it in the fridge for up to 3 days.

When you’re ready to bake, take the log out and remove the plastic covering.  Beginning at one end, slice the cookies about ¼” thick and place them on the prepared cookie sheets.

Bake for about 10 minutes – you want them to be a lovely golden brown.  Let cool and serve.

**HINT – using a piece of thread instead of a knife, makes it easier to cut the dough.

Scary Things or Imagination

Years ago, a teaser news story from Huffington Post popped up in Catherine’s email about a mysterious E85 star jelly“star jelly” found in the RSPB Ham Wall nature reserve in Somerset, England. Being paranormal buffs (which, for us, includes sci-fi), naturally, Catherine looked up the article. There are a lot of theories out there, but not much positive proof about what this substance is. Some people postulate that the jelly is slime mold, a form of cyanobacteria, the remains of regurgitated amphibians, or frog spawn. Personally, all of the above are too ordinary. As paranormal fans, we like the more supernatural of the explanations that says the “star jelly” is related to the sighting of a strange meteor like object seen over the reserve last week—an extraterrestrial substance dropped to earth from the meteor shower.

 

This isn’t the first time “star jelly” has been found. Records dating back to the 14th century mention finding this gelatinous material after meteor showers. It’s been called star jelly, astral jelly, star rot, star shot and astromyxin. Non-paranormal believers say it’s coincidental that people find star jelly after meteor showers. Curiosity about finding a meteor rock leads them to places they wouldn’t normally go, and they find the substance, which has been there all along. In other words, they want to believe it’s this baffling substance from outer space.

Star jelly has been a part of several fiction stories. Sir Walter Scott’s novel The Talisman, H.P. and Lovecraft’s short story The Colour of Space.

 


Putting words and stories on paper is second nature to co-authors C.D. Hersh. They’ve written separately since they were teenagers and discovered their unique, collaborative abilities in the mid-90s. As high school sweethearts, and husband and wife, Catherine and Donald believe in true love and happily ever after.

Southern Plantations’ Dark Legacy

Visions of Scarlett O’Hara’s Tara from the movie Gone with the Wind or the famous Oak Alley Plantation sweep through ones’ mind when conjuring up those antebellum period plantations of the deep south for some. However, for the black race and people of color, plantation life in the 1700s and 1800s was a constant struggle just to stay alive. In The Last Timekeepers and the Noble Slave, the third installment of The Last Timekeepers time travel adventure series, eleven-year-old protagonist Drake Bailey must confront not only his demons, but the terrible oppression and cruelty against his race in antebellum Georgia.

When I researched these grand Southern homes for my novel, I found a few myths in this mired past. In movies, plantations were often depicted as ‘mansions’ with fluted columns and a broad porch; massive trees with their drooping limbs lining circular driveways, and finely dressed men and women parading their wealth for all to see. Um, no. There were a few plantations which fit this description, but these were the exceptions. Most plantation owners lived modestly and some even poorly. The overwhelming majority of slaveholders held less than twenty slaves. Yet, even if a man only held one or two slaves, he had considerably more status in southern society than a man who held no slaves. Status was everything to the South’s white population, and the more slaves a man owned, the more respected he was.

The plantation was a world in itself. I created the fictional Taylor Plantation situated near Athens Georgia, close to where my time traveling characters would land. Trying to keep the grounds as authentic as I could, the plantation was comprised of the slave owner’s house (the Taylors) which was called the ‘big house’, the line of single-room cabins dubbed ‘slave row’ where slaves called ‘home’, and nearby loomed the overseer’s house. Scattered about this plantation were various barns and sheds where animals, tools, and the harvested crops were stored. Surrounding everything were cotton fields and woods and situated in the back of the property lurked the slave cemetery by a winding creek.

Curious on how plantations came to be? In the early 17th century, when the British colonized what
would later become the United States of America, the crown offered large plots of land to settlers as an incentive for them to journey to a strange and harsh new world. Many settlers who took the deal combined their properties into larger settlements—in the South, these eventually became plantations. As these landowners needed immense manpower to maintain the plantations, they turned to slavery, importing captured peoples from Africa as forced laborers.

Plantations operated relatively unfettered in the American South for more than 250 years; the Northern states, however, had all abolished slavery by 1804. Despite Congress banning the African slave trade in 1808, the domestic slave trade in the South continued until the ratification of the 13th Amendment in 1865, which banned slavery outright.

During Reconstruction (post-Civil War years), the plantation system collapsed. While some plantations were destroyed, many were subdivided, with both black and white farmers leasing these smaller plots as sharecroppers (who would give a portion of their harvest to the landowner as ‘rent’) or tenant farmers (who paid rent). These farming practices continued through the mid-20th century until the Great Depression and advancements in farming technology got rid of traditional plantations for good.

Many people descended from African American slaves consider plantations to be the American version of Auschwitz. They’re not wrong. Filled with echoes of death and despair, Southern plantations—many of which are in disrepair and decay—are places where slavery made the romanticized southern lifestyle possible and continue to carry their dark legacy to this day.

Are Friends Electric?

Humans tend to become emotionally attached to inanimate objects. People love their cars, for example. I don’t have a car, but I do have a fridge-freezer. Or rather, I did. It died on me this week, announcing its demise by tripping out all the lights and the other household appliances and sending me into a panic that had me phoning my landlord for help. He sent round an electrician who restored equilibrium to the fuse box and read the fridge-freezer its last rites.

I joked with the electrician: “How dare it break down after twenty-eight years of constant service!” He agreed that they don’t make white goods like that anymore. But when he’d gone, I felt a bit sad. I remembered the day I bought that fridge-freezer brand new. I had escaped from a bad marriage and found a place to rent and was filling it with what I needed to start my new life. Things were not destined to go smoothly, however, and there were to be many house moves and relationships ahead. Throughout all those house moves my longest-lasting relationship has been with my fridge-freezer!

I sat at the kitchen table and reminisced. All the things I had been through over those twenty-eight years! And that fridge-freezer had stood without complaint in whatever kitchen it found itself in (and for a few years, in a draughty back porch). It moved between houses and bungalows, from the town to the countryside, bumping about in removal vans and trucks. Along the way it lost its pristine-white sheen and gathered fridge magnets like barnacles. Its edges became a little rusty, the shelves cracked and the little light no longer worked when the door was opened. But it steadfastly did its duty, a silent witness to the dramas around it and the passing of time. And sometimes when I woke in the night, its gurgling and purring sounds drifted from the kitchen to my room and reassured me, though I don’t know why. It was just a machine but somehow it had become a friend.

I remembered as a child the time before we even had a fridge and how difficult it was for my mother to keep food fresh. The day the first fridge arrived was everyone’s birthday come at once! It had an icebox and that meant ice cream! Nowadays, we take such devices for granted. What a shock it is when they stop working for us.

Yes, I had taken that fridge-freezer for granted. It never let me down until this week and I am lost without it until a replacement is delivered. We have been through a lot together and I know I will never see its like again. It will be a wrench to see it loaded onto yet another truck, because this time it won’t be going to another kitchen in another home. This time it will make its final journey when the city council hauls it away to put it out of its misery.

Yes, it’s an inanimate object, insensate and soulless and just a hulk made of plastic and metal, but I know that when they take it away, I will be thinking, “Goodbye, old friend. Thanks for everything. It’s been a blast.”

Romance Meets Outdoor Dining

Spring is an amazing time of year and my favorite because that’s when the Earth comes alive. All sorts of beautiful things happen. Trees are budding, tender plants push through the ground, and romance is in the air and warm weather is just a few weeks away.

I am a romantic through and through. Always have been and with any luck I always will be. Romance is much more than a quick trip to tangle the sheets. It is about being with someone you love and doing little things to show them how much they mean to you. In my case I cook because I love it.

When summer arrives and the gardens are ablaze in color, I want to move the romance outside. So why not share a summer night with your someone special? What better way than with a sizzling romantic dinner, candles, wine, and music. You don’t need much to set the mood and turn your patio, balcony, or kitchen into a lover’s nook. Make your night special with great food because is the doorway to infinite possibilities.

A printed flat sheet is perfect for a festive tablecloth or set out placemats for the plates and serving dishes. Use plenty of candles in different sizes and a variety of holders scattered around the table to enhance the mood, but definitely avoid scented candles. Stemmed wine glasses sparkle in candlelight and add a festive feel to your dinner. Use your regular dishes or, for fun, mix it up with a number of different plates that don’t match but complement each other for the different courses. Experiment and have fun.

Now that you have the perfect location and setting for you and that right person, may I suggest you spoil yourself with an intimate dinner meant for lovers. It is easy to prepare, and leftovers make marvelous sandwiches. This recipe also works great in the oven.

Ask your butcher to dress the tenderloin. If he won’t, then you need to remove the excess fat and sliver out the silver strip along the side. Easy to do. Slide a sharp knife under the strip close to one end. Use a back and forward motion like sawing to ease your knife between the meat and the strip as you lift it away from the beef.

Marinated & Grilled Beef Tenderloin

Potatoes Baked on the Grill

Grilled Asparagus

Sautéed Mushrooms

Dry Red Wine – Valpolicella 

Marinated & Grilled Beef Tenderloin

2 – 3 lb. (1 – 1.5kg) beef tenderloin

½ cup (120ml) olive oil

½ cup (120ml) dry red wine

3 rosemary sprigs or 1½ tsp. (7.5ml) dried

6 thyme sprigs or 1 tsp. (5ml) dried

1 bay leaf

3 garlic cloves, chopped fine

Freshly ground pepper to taste

Oil to coat grill grate

Combine all ingredients in a long bowl or plastic bag and a shallow pan. Marinade in fridge 2 – 20 hours. Seems like a strange time span, but the longer the marinade the tastier the beef.

Remove meat from refrigerator 1 hour before grilling or roasting in oven. Meat needs to be almost room temperature.

Grill Instructions

Preheat grill to medium-high.

Pat tenderloin dry. Discard marinade. Add beef, close lid, and grill 15 – 20 minutes or until meat is done to your preference. Be sure to turn meat several times to avoid burning.

Oven Instructions

Preheat oven to 400° F (200°C).

Line a roasting pan with aluminum foil. Pat tenderloin dry. Discard marinade. Add beef to pan. Roast 30 – 40 minutes or until meat is done to your preference. Save the juice to moisten he meat when you serve.

Baked Potatoes on the Grill

1 russet potato per person

Olive oil

Aluminum foil

Butter

Sour cream

Chives

Freshly ground pepper to taste

Preheat gas grill to medium-high.

Wash potatoes under cool water. Pat dry. Poke several sets of holes in each potato with a fork. This stops the potato from bursting as it bakes. Rub potatoes with a small amount of olive oil to keep the skin soft. Wrap each potato in a section of aluminum foil.

Place potatoes on upper shelf of grill. If you don’t have an upper shelf, then lay them at the outer edges of your grill.

Grill 45 minutes to 1 hour, turning every 15 – 20 minutes. Test if done by inserting a toothpick into the potato. It should glide in easily.

To serve, remove foil and then cut an X across the top of each potato. Using potholders squeeze the ends toward the center until the potato mounds.

Serve with butter, sour cream, chives, and pepper.

Grilled Asparagus

6 – 8 asparagus per person

½ cup (120ml) olive oil

2 tbsp. (30ml) lemon juice

½ tbsp. (7.5ml) garlic powder, not salt

1 tsp. (5ml) dried basil

Freshly ground pepper to taste

Trim, then discard, the tough bottoms off asparagus with a sharp knife.

Combine oil, lemon juice, garlic powder, basil, and pepper in a glass or ceramic dish. Stir well. Add asparagus. Stir gently to coat the spears.

Set gas grill to medium-high heat. Poke a few holes in a piece of aluminum foil then set it onto the grate. Lay spears on top. Turn frequently to avoid burning.

Asparagus are done when they color to medium brown, about 5 – 7 minutes.

Arrange spears on a dish and serve immediately.

Sautéed Mushrooms

6 – 8 mini bella mushrooms

1 tbsp. (15ml) olive oil

2 tbsp. (25g) butter

½ small onion, sliced thin

2 tbsp. (30ml) dry vermouth or white wine

Freshly ground pepper to taste

Clean mushrooms with a dry paper towel to remove bedding soil. Slice them in half lengthwise if medium or into thirds if large.

Over medium heat, drizzle a small amount of olive oil into a medium-sized frying pan and add butter. Stir in onions and mushrooms. Sauté until almost tender, 3 – 6 minutes.

Pour vermouth or white wine over the mushrooms and continue to heat.

To serve, grind pepper across the top and spoon into a warm serving dish.

This dish is best cooked and served on the same day. Leftovers are soggy.
